    I ended up going to this restaurant because it was Sunday and the most famous restaurant in Ragusa, "Duomo" was closed.  Oh, my, was I in for a treat!  This ended up being one of the finest dinners I had in years!
     The restaurant is located inside a cave, but the setting is wonderful.  It is small.  The maitre'd and waiters were all superb: they knew everything about the menu and explained it in good English.
     There was 5 different kinds of bread, including a knock-out bun with sesame and cocoa chips!  All dishes were immaculately prepared and served.
     For a starter I had one of their specialties: a rabbit sausage prepared in a classic Sicilian way, but with the Chef's unique twist.  The Chef came out and introduced the dish as it arrived!  It was arguably the best rabbit dish I've ever had.
     First course was black ink pasta with octopus and sea urchin.  Sea urchins tend to give dishes very "sea-like" flavor - almost like a sea-weed.  To balance the strength the Chef ingeniously added ricotta cheese that soothed that flavor.
     I ended up with succulent lamb in a sweet sauce.
     For a desert, the Chef made a special dish of wine grapes that were somehow made into a sort of jam mixed with cream and nuts.
    All dishes were served with fine selected Sicilian wine.
    In a terrific little trick, they brought me a hot towel rolled into a small cylinder.  As they poured hot water over it, the cylinder expanded! Very nice touch!
    This was without doubt the best dinner I had in Sicily.

    Higher rating  if this weren't stated as a Michelin (M) started restaurant. Chef was amazing ( best tonight were the Oyster with calvados, eggplant, beef filet and the pork belly), our waiter ( enthused and joyful) and the the person checking us in.

    Carmelo the sommelier was dull. He would say the bare minimum, and then gone. He expressed no joy nor wanted to get involved with any small talk. He possibly look under the weather. He was a kill joy!  He even served a bold red wine ( to pair with our meet) very chilled. Thus the wine tasted like rubbing alcohol when combined with the meat!  Able to get better pairing after 20+ minutes bringing it up to room temperature (which should have been done already Carmelo) but by then food was getting cold.

    Price for this M-rated place was very reasonable but with this poor wine experience I'd maybe come back for the great food only.

    Omg, I totally lucked out. Yelp says this place is closed. That's crazy! I called and they took my reservation no problem. The food and the place is incredible. Worth the climb or investment to find it!

    Fantastic fining experience located in a former stable. Completely carved out  of stone. Very professional staff headed by a 37 year old chef who has already been awarded a second Michelin star. His cooking is imaginative. The wine cellar is deep. Prices in line with the quality
